- ¾ cups of gluten free oat flour
- ¾ cups of a gluten-free all purpose flour blend
- 1 tbsp. of cornstarch
- 1 tbsp. of baking powder
- ½ tsp. of salt
- 1¼ cups of a non dairy milk
- 1⅓ cups of maple syrup for the recipe and additional for eating
- ¼ cup of peanut butter
- 1 tbsp. of apple cider vinegar
- 1 tsp. of pure vanilla extract
- Coconut oil cooking spray
- Vegan butter for taste

Whisk together the gluten free oat flour, all-purpose flour blend, cornstarch, baking powder, and salt in a large bowl. Then whisk together the non-dairy milk, maple syrup, peanut butter, apple cider vinegar, and pure vanilla in a medium bowl. Next, add all of the wet ingredients to all of the dry and stir until combined.
Use a large frying pan and heat over medium heat for about 2 minutes. Lightly spray the pan with your coconut oil cooking spray. Use a ⅓-cup measuring cup to scoop the batter onto the pan and cook your vegan pancakes like regular pancakes; until the top begins to bubble and the edges begin to lift. Use a non-stick spatula to flip the pancake over. Cook for another minute or two (varies). Carefully lift an edge of the pancake to see if it’s golden brown, then move the pancake to a plate and repeat with the rest of the batter, making sure to re-grease the pan between pancakes.
Serve your vegan pancakes topped with a bit of vegan butter (optional) and drizzle with maple syrup.
