Ginger cookies area holiday favorite but it’s time for a loaf of wonderfulness to take the show, a vegan, gluten free, soy free ginger bread recipe! This moist, spiced loaf will be yum yum in your tum tum like my little four year-old would say. While everyone else is bringing ginger bread houses and ginger bread cookies to the party bring something that is all too often forgotten, the delicious spiced cake loaf full of holiday flavor. See below on how to bake the best vegan, gluten free, soy free ginger bread that you’ve ever tasted!

Ingredient List for this vegan, gluten free, soy free ginger bread recipe:

  • 3 cups of White Rice Flour, this is my favorite gluten free option for baking desserts that don’t taste “gluten free!”
  • 2 ½ tsp of baking powder
  • ½ tsp of baking soda
  • ½ tsp of salt
  • 1 tsp of allspice
  • 2 eggs worth of your favorite egg replacer, mine is Ener G Foods Egg Replacer. It works great!
  • ½ cup of oil
  • ½ cup of molasses
  • 1 cup of almond milk
  • 1 tsp of vinegar
  • 3-6 tbsp. fresh grated ginger
  • ½ cup crystallized ginger, chopped
  • ½ cup walnuts

Baking instructions for this vegan, gluten free, soy free ginger bread recipe:

Preheat your oven to 350 F. Next, sift together the flour, baking powder, baking soda, allspice, and salt in a large bowl.

Add the egg replacer of your choice, oil, molasses, vinegar, milk, crystallized ginger and walnuts. You will want to mix

this together until it is “just mixed.” Lightly oil a loaf pan and spoon out the batter into the pan. Bake your ginger bread

loaf for 50 min. Test the middle of the loaf with a knife to make sure the loaf is done. Once your knife comes out clean,

the loaf is done. Let the loaf cool for 10 min. before slicing it up for you and yours.
